Don’t Throw Burrito
Easy to make and delicious.
- Onion (sliced)
- Garlic clove
- Pepper (sliced)
- Tin of tomatoes
- Tin of red kidney beans
- Tin of sweetcorn
- Packet of mincemeat
- Fajita spice – 2 teaspoons
- Tortilla wraps
- 500g rice
Boil the rice until cooked.
whilst the rice is cooking, preheat the oil in a large frying pan. Add the sliced onion and fry until soft. Add the garlic and mincemeat and fry until the meat is cooked.
Add the pepper, tins of tomatoes, beans and sweetcorn and the spice mix and cook until the pepper is soft.
Fill the tortilla wraps with rice, the meat mix and grated cheese. Fold the wrap into a burrito shape (I’m not going to even try to explain – watch an internet tutorial!) and serve with salad on the side.

Makes..well it depends on the size of your skulls!
- 250g flour
- 200g butter (chopped into squares and cold, otherwise you won;t be able to get the breadcrumb texture)
- 100g sugar
- lemon zest
Preheat the oven to 160°C (fan 140°C / gas 4).
Rub the flour and butter together until the mixture is like breadcrumbs, then add the sugar and lemon zest and mix together until it combines.
Roll out to 1cm thick and cut into skull shapes using a knife or a skull shaped cookie cutter.
Put in the oven and cook until lightly browned – about 40 minutes.
