Pancakes
I could eat these traditional pancakes any time of the year, and I love them with lemon juice and sugar for a sweet treat, but I am assured that they also go well with savoury fillings…
- 115g flour
- 285ml milk
- 1 egg
- pinch of salt
- ½ teaspoon oil
Mix egg and flour then slowly add the milk and whisk until smooth.
Heat some butter in a frying pan until melted.
Spoon enough mixture into the pan to cover the bottom and cook until golden, then flip and brown the other side.
American Pancakes
Thicker and fluffier than the pancakes above, I love these with maple syrup and fruit.
- 135g plain flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 tablespoons caster sugar
- 130ml milk
- 1 large egg (beaten)
- 2 tablespoons melted butter / oil
- Toppings of your choice
Sift the dry ingredients into a bowl. In a separate boil, mix the milk, eggs and butter/oil. Add to the dry ingredients and whisk until there are no lumps.
Heat some butter in a frying pan until melted.
Spoon some of the mixture into the pan and cook until golden, then flip and brown the other side.
Serve with toppings of your choice.
