September Soups

I love soups this time of year, served in a mug works best if you want to keep gaming whilst eating.

Carrot Soup

  • 6 rashers of bacon
  • 8 carrots
  • 1 litre of vegetable stock
  • Carrot tops or spinach
  • Cream cheese
  • Parsley for garnish
  • Bread to serve

Cut up and cook the bacon in a pot until cooked. Chop up and add the carrots and the stock to the pot. Once soft, add the carrot tops or spinach for a few minutes until all cooked. Blend and serve into bowls or mugs. Stir in a spoonful of cream cheese and add a sprig of parsley for garnish. Serve with bread and butter.

Leek and Potato Soup

  • 6 rashers of bacon
  • 6 leeks
  • 6 potatoes
  • 1 litre of vegetable stock
  • Cheddar cheese

Cut up and cook the bacon in a pot until cooked. Chop up and add the leeks, potatoes and the stock. Once soft, add the carrot tops or spinach for a few minutes until all cooked. Blend and serve into bowls or mugs. Cut up some cheese into cubes and stir in. Serve with bread and butter.
